How to Identify Pure Buffalo Ghee: Tests That Work, and Tests That Do Not

Search for how to check ghee at home and you will find a dozen tests, repeated confidently everywhere. Some of them do tell you something. Several tell you nothing at all. And with buffalo ghee specifically, one of the most commonly repeated tests actively misleads people.

The test that misleads with buffalo ghee

"Pure ghee is golden yellow." This is the one to throw out. It is roughly true for cow ghee and simply wrong for buffalo ghee, which is naturally white to pale cream because buffalo convert carotene into vitamin A rather than passing it into the milk fat.

Judging buffalo ghee by a cow ghee standard leads people to reject good ghee and, worse, to prefer a jar that has been coloured. The full explanation is in why buffalo ghee is white.

Tests that are worth doing

The palm test. Put half a teaspoon in your palm. Pure ghee melts at body temperature, within a few seconds. Ghee cut with vanaspati or palm oil sits there noticeably longer, because those fats melt higher.

Aroma when warm. Heat a little. Real ghee smells nutty and distinctly milky. Adulterated ghee smells faint, waxy, or oddly perfumed — added flavour is common precisely because cheap fat has no aroma of its own.

How it sets. Leave a jar somewhere cool. Slow-cooked ghee usually forms visible grain. A jar that stays perfectly smooth and uniform in every batch is worth a question.

The label. Ingredients should read as one thing. If there is a list, that is the answer.

Tests that do not tell you much

The iodine test. Iodine turning blue-black indicates starch. It catches one crude, old-fashioned adulterant and nothing else. A negative result does not mean the ghee is pure — it means there is no starch in it.

Melting in a pan and looking at the colour. Colour tells you about the animal and the season, not the purity.

The double-boiler and salt tests. These are widely repeated and not reliable enough to act on. Treat a result from either as a hint at best.

The honest summary is that no kitchen test detects the adulterants that actually matter today. Modern adulteration uses refined vegetable fats specifically chosen to behave like ghee.

The one check that settles it

A laboratory report, from a laboratory you can verify, for a batch you can identify.

What to look for:

  • Who tested it. A third-party NABL-accredited laboratory, not the brand's own facility.
  • A ULR number. Every NABL report carries a Unique Laboratory Report number. You can cross-check it on the NABL portal without contacting the seller.
  • What the report actually covers. This matters and almost nobody checks it. A nutritional composition report tells you energy and fat. It does not test for adulteration. A brand claiming "lab tested" against a nutrition-only report is not claiming what you think it is.
  • The date. A report from two years ago says nothing about the jar in your hand.

Where we stand on this

We would rather be precise than flattering about our own position. That report confirms composition. It is not an adulteration panel, and we do not describe it as one.
