What is kachi ghani mustard oil?
Mustard oil crushed slowly in a wooden kolhu (ghani) without added heat, and not refined afterwards. It keeps its natural colour, aroma and pungency.
Which mustard oil is best, yellow or black?
Yellow is milder and suits everyday cooking. Black is bolder and more pungent, traditionally used for pickles, fish and massage. In our lab tests black mustard oil had more omega-3: 7.65 g vs 5.66 g per 100 g.
