What does "kachi ghani" actually mean?

Kachi ghani is cold pressing in a traditional wooden kolhu. The seed is crushed slowly at low RPM with no external heat, so the oil keeps its aroma, colour and natural nutrients. Refined oil is extracted with heat and chemical solvents instead, then bleached and deodorised.

Does this mustard oil contain argemone oil?

No. Argemone is the most common toxic adulterant found in mustard oil across India. Our FSSAI adulteration test at Equinox Labs — report EQNX:001:FT:26:05:02519 — returned Negative.

Are chemical solvents used to extract it?

No. Hexane is the petrochemical solvent used in industrial oil extraction. Our hexane residue result was under 1.0 mg/kg against an FSSAI limit of 5.0 mg/kg, which confirms the oil was pressed mechanically, not chemically extracted.

What is black mustard oil best used for?

Kali sarson oil is bold and deeply pungent, which is why it is the traditional oil for tadka, achaar and North Indian cooking. If you want a milder everyday cooking oil, choose the yellow mustard oil instead.

Why does this oil smell so much sharper than refined mustard oil?

The pungency comes from allyl isothiocyanate, released naturally when mustard seed is crushed. Refining strips it out. Black mustard seed carries more of it than yellow, which is why this oil is the sharper of the two.

What is the shelf life and how should it be stored?

12 months from the pressing date. Keep it in a cool, dry place away from direct sunlight, with the cap closed.
