Why Is Buffalo Ghee White? (And Cow Ghee Golden)

If you have only ever bought cow ghee, your first jar of buffalo ghee can be a shock. It is white — sometimes almost bone white, sometimes pale cream — and nothing like the deep golden ghee you were expecting. The instinct is to assume something is wrong with it.

Nothing is wrong with it. White is what buffalo ghee is supposed to look like.

The reason is carotene

Cows eat green fodder, which contains beta-carotene — the same orange-yellow pigment that makes carrots orange. A cow passes a good part of that beta-carotene straight through into her milk fat, unchanged. Cook that fat down into ghee and the pigment concentrates. That is where the golden colour comes from.

A buffalo eats the same green fodder. The difference is what her body does with the carotene: she converts nearly all of it into vitamin A, which is colourless. Very little pigment reaches the milk fat, so the makhan is white and the ghee stays white or pale cream.

The colour difference is not about quality, freshness, or method. It is about the animal.

What the colour actually tells you

  • Buffalo ghee, white to pale cream — normal. This is what you want to see.
  • Buffalo ghee, deep golden yellow — worth a question. Either cow ghee has been mixed in, or colour has been added.
  • Cow ghee, golden — normal.
  • Cow ghee, uniformly bright yellow in every single batch — worth a question. Natural carotene varies; perfect consistency usually means blending or added colour.

Colour shifts with the season

Cow ghee gets deeper in colour when the animals are on fresh green fodder, and paler in the dry months. That variation is normal and is a sign you are buying from one source rather than a blended tank.

Buffalo ghee varies far less, because the pigment is being converted regardless of how much green the animal eats. Either way, the thing to be suspicious of is not variation — it is a jar that looks identical every single time.

Does white mean less nutritious?

On the two things our laboratory actually measured, the two ghees are near identical. Our April 2026 NABL reports from Equinox Labs put buffalo ghee at 897.66 kcal and 99.74 g of fat per 100 g, and desi cow ghee at 897.75 kcal and 99.75 g. Both are essentially pure milk fat.

The carotene in buffalo milk has been converted to vitamin A rather than lost — but our April report tested composition, not vitamins, so we are not going to put a number on it. When we have that tested, we will publish it on the Lab Reports page like everything else.

Where the two genuinely differ is texture and behaviour in the pan. Buffalo ghee is denser and creamier, which is why it suits mithai, halwa and festive cooking. Cow ghee is lighter and more granular, which is why it ends up on the roti.

So how do you actually check a jar?

Colour is a weak test on its own. The tests that tell you something are aroma, melting behaviour, how it sets as it cools, and — more than any home test — a laboratory report you can verify. We cover this properly in how to identify pure buffalo ghee.

What we do at Chahal Agri Farms

Our buffalo ghee is hand-churned from curd using the traditional bilona method and slow-cooked in an earthen pot over dry cow-dung embers in Singhpur Sani, Sambhal. It comes out white to pale cream, and we do not correct that. Nothing is added to any batch — no colour, no vanaspati, no flavour.
